As a vette guy I haven't got a lot of experience doing a resto on a steel bodied car. My biggest question is how do you get the rust out of steel parts. I know that flat parts, like hoods, doors etc are almost impossible to sandblast without it getting warped.

Luckily for you there's a company in Belgium that acid dips steel bodies in a dipping bath
 
At least at the places I've seen in the US, they dip the body in an anti-rust treatment once the acid has done its job.

I'd love to get my '54 GMC 1-ton panel body done, but I don't know if there's any place within a reasonable distance of me that can handle something that huge.
 
Almost all dipping is to remove paint first and for that they use a sodium hydroxide solution.
Then the body/parts are cleaned and rinsed with water.
Then some outfits use the electrolysis method with it and if so rinsed again.
Then the next dipping is phosphoric acid to neutralize the sodium hydroxide and further remove rust and also to prevent rust.

Price might be an issue, but depending on what you need, paint removal or rust or both.
If just removing rust and neutralizing it on large or small parts, then just use phosphoric in a weed sprayer as needed. No need to worry about the hollow spaces.

Bare metal must be first coated with epoxy not just primer.

And be real careful with sodium hydroxide, it can burn the hell out of you and blind you.
And phosphoric will eat your concrete floor.
